Whether for environmental, health or animal rights reasons, the market for vegetarian and vegan food choices is rapidly expanding. Mike Roach decided to hop on that train, leaving his job and opening “Mike’s Vegan Hot Dogs,” the first 100 percent vegan food truck in Carrboro, North Carolina.
